Filet of SoleTaste: Sole is a type of flatfish that's prized for its sweet, delicate — never fishy — flavor, something like tilapia crossed with cod. Its firm, meaty flesh can be salted like a steak, and while it does become flaky and tender when cooked, it's difficult for it ever to get mushy.

Orange RoughyOrange Roughy became popular when stocks were first found by trawlers in the late 1970's. Instantly valued for their soft, moist white flesh and mild taste, stocks crashed rapidly. Stocks are now recovering, and no longer considered subject to overfishing. One notable aspect of orange roughy's taste is its slight natural sweetness. Everything was absolutely delicious!! The Po boy was perfectly seasoned and the bread was soft, the portion size was perfect! And the hush puppies were crunchy and soft on the inside, yummy flavor.
